The Bible Metaphors

So, a whenever any uneducated theist is given a scripture from the OT that makes God look like a homicidal maniac, he retreats to the safe zone "well it's just a metaphor" where it can be debunked. Most Christians haven't read the bible and can be given nearly any random scripture that they haven't heard of and cannot give a translation for. Lets face it, the average theist is two handles short of a pogo stick and cannot debate their way out of a cardboard box. But, the smarter Christians that can actually read past a 9th grade level can be much more of a challenge. Christians like Baptists who are followers of Jesus "as the teacher of good", can rebuttal much better for "debatable" scriptures. So, I am here to see how everyone else here goes about debating this topic.
Their argument is..
The OT's rules have been lifted by Jesus (II Corinthians 5:17) and became new. Mosses gave laws but Jesus gave truth (John 1:17). God is a the lawgiver and Jesus is the teacher and Gods OT laws have been lifted with the birth of Jesus.
The big problem is that the NT is much better literature than the OT by a huge amount. Jesus is just an all around nice guy. Though, with the only real exception that gays should be killed (Leviticus 20:13). It's hard to find any major flaws from my research. Things like (Luke 19:27) or (Mark 7:10) have been called a parable and not read in full context (which can be interpreted much differently when read in full context).
Anyways, that's a very short nutshell. Want to hear how you guys would go about debunking a NT only Christian.
