ok, so why would we look at a watch to see design, surely it the watchmaker argument is true than we could just simply look at the sky... why a watch?

I don't think there is a particular reason
they say "look at the design of a watch and you will see that everything else must also be designed"
I say "why can't I look at everything else, and then see that the watch was designed?"

According to people who adhere to the watchmaker argument, the sky was designed. They come into the argument with the belief that everything was designed.
The problem, though, isn't that the sky isn't created but that the god that they worship has to be, according to the watchmaker argument.
This is why the argument fails.
The "creation" implies a creator. The problem with the universe/nature is that like a watch it too is desigened, but from the bottom up, not from the top down. Most theiest miss this point.
