Food consumption & the human body?

...Okay; I don't understand this:

 

Why is it important to 'balance out' your diet and intake given quantities of specific nutrients? When you digest food, aren't you essentially just doing the same thing as putting hydrocarbons into your vehicle - just providing calories that can then be turned into work? I mean, your body prodcues most/all of the mechanisms it functions with (blood cells, brain cells, muscle tissue, skin tissue, etc) through cellular division anyway, right?

1] Cells need nutrients to operate

 

2] Cells can't multiply indefiniently without breaking conservation of matter, they need nutrients to divide.

Mmmm bread

Man cannot live on carbs alone!  The body does not produce everything it needs.  Stop eating food that contains vitamin C and you'll get scurvy.

Also, there are 8 'essential' amino acids that the body doesn't make, so you have to eat some kind of protein that contains them, otherwise your body won't be able to make all the proteins it needs.  Vegans that don't eat a varied diet have been known to develop serious problems due to this.

There are also trace amounts of Arsenic, Iodine, Zinc, Copper and several other elements that the body needs for important enzymes.

You need a balanced diet so that your body has all the raw materials it needs to repair broken DNA strands, make new cells, grow new hair, et cetera.  When cells die, they get tossed out into your bloodstream where the liver and kidneys filter them out and you lose the nutrients they contained.  Think of all the skin cells you shed, your fingernails-- that's all nutrients.

I've never met a healthy looking Vegan. Not to say they don't exist, but the ones I've met all look unhealthy and even discolored sometimes.
